Marinated raw zucchini

Marinated raw zucchini, an original starter….

Be surprised by raw zucchinis … unavoidable in rawfood!


The more marinated, the better…!


IngredientsCourgettes crues marinées

– 2-3 small zucchinis (environ 400g.),
– 2-3 shallots,
– 1 lemon juice,
– 2 CS. toasted sesame oil,
– 1 CS. umébosis, tamari or soy sauce,
– 1 CS. cider vinegar




Kitchen utensils used : a Food processor or a Mandolin slicer


Thinly slice the zucchinis with skin (if they are organic), using a mandolin or a robot.

Chop the shallots.

Add lemon juice, oil, umebosis and cider vinegar.

Mix well, and marinate for at least 1 hour in the fridge.

Your raw marinated zucchinis are ready!
